We decided to let our Head Chef Jeroen take over our Instagram today and he has a special for you throughout lockdown!

Rosemary & Kumara focaccia
400 gr Orange kumara peeled
600 gr High-grade flour
9 gr White sugar
15 gr Dried yeast
13 gr Sea salt
20 gr Extra virgin olive oil
330 gr Water
- Rosemary, chilli flakes, sea salt for garnish

Boil kumara until soft and cool down completely.

Add flour and kumara to a bowl of the kitchen machine. With the paddle attachment mix until well combined and it resembles a crumble. Add remaining dry ingredients and mix until combined. Slowly add water and olive oil. A wet dough should form now. Blend on high until the dough starts to come away from the mixing bowl. At this stage cover it with a tea towel and leave it to rise for 2 hours.

Line a shallow baking tray and drizzle with some olive oil. Add dough to a tray and leave to rest uncovered for a further hour or so. Use your finger to create small holes in the dough during this process. Drizzle with some more olive oil and sprinkle rosemary, chilli flakes and sea salt on top.

Bake at 230C for 15 minutes or more if needed. This will depend on the thickness of your focaccia.
